Every year we do something special for Ganpati and as always, the flavours of this Pie is inspired by our favourite treat around this time, Ukadiche Modak.
This little Pie has flavours of rice, coconut and jaggery. Sitting inside a buttery and flaky pastry is the rice pudding cooked in coconut milk & coconut sugar with a hint of pandan and nutmeg. Hiding under the pudding is a sweet and tart mango jelly (we froze a bunch of pulp during the season) which adds a wonderful fruitiness to it. A light and voluptuous mound of coconut nutmeg cream on top is the perfect finish to this ensemble.
It's oddly light yet rich and will remind you of the delicious, toasty & coconutty filling inside a Ukadiche Modak. As a nod to the occasion it's also eggless.
