We have been working on these Gingerbread cookies for a while now. We wanted a thin crispy cookie with a slightly chewy middle and a beautiful interplay of sweetness and spices. We use liquid jaggery (kavki) here along with an array of spices like dry ginger, nutmeg, cinnamon & clove. We also use part wholewheat flour in the mix for a lovely nutty flavour. And you might think the glaze is just decorative but we add a squirt of lemon juice into the mix making it essential to the brightness and overall balance of the cookie!
It's absolutely delightful as it is but will go oh so well with a cup of Earl Grey or well made Cappuccino. A bag of this will also make for a lovely gift during this season of spreading joy & in general sharing in the love.
