As cooler weather approaches we have a perfect pastry for hot coffee mornings. This Hazelnut & Pear cakelet is made using hazelnut flour lending to a superbly nutty and tender cake. Chunks of caramelized & slightly crunchy pear folded through the cake rounds off the flavor & texture beautifully. A cup of strong coffee and this cake is perfect for breakfast or an afternoon pick me up.
Store in an airtight container in the fridge. Warm up slightly before eating / serving.
