Linzer Tart Cookie (eggless)

This cookie combines elements from a Linzer Tart and a Mincemeat pie (classic Christmas treat with roots in England). Here we use a shortbread-like dough for the cookie, filled with a house-made mincemeat mix. There is no meat in the filling as the name suggests, instead it is made with apples, raisins, cranberry & spices all cooked together in orange juice. 

The combination of the buttery cookie dough and bright, sweet & citrusy mincemeat truly works, especially with a hot beverage.
