We have been working with Chef Gayatri Desai and then eventually with Ground Up, Pune for years now & it's been one of our most creative partnerships.
Most of you would have tasted the amazing smoked tofu that they make. We decided to use that in our bakery and what we ended up creating is a beautiful bun filled with the crumbled smoked tofu. The dough itself utilizes the tangzhong method so the bread is soft, chewy and wonderfully moriesh as is. The filling that Gayatri made for us has the tofu cooked with a corn masa miso (made in house at Ground up) along with chillies, ginger and scallion, making the most flavorful salty, sweet & spicy filling with a beautiful umami hit.
These are great on their own as a snack but can easily be included as an accompaniment in an asian meal spread of stir fries, fried rice too & salads as well.
