This little treat is inspired by the humble Fruit Custard (usually Brown & Polson or Weikfield) that we all grew up eating. We always added mango and grapes to ours (meticulously cubed by my dad) but we were able to get our hands on some beautiful organic summer fruits which truly elevates this otherwise simple tart.
These beauties have a thin buttery biscuit base, topped by a layer of brown butter pistachio cake. Vanilla custard goes on top of this, followed by a medley of fruits such as peach, figs, cherries & apricots. Together eaten, it is crispy, crumbly, creamy, fruity & sweet. Although we have already hit monsoon, it is very much a summer dessert but do what we did - pair it with a hot cup of coffee to make it monsoon worthy!
