Belgian Chocolate Chip & Olive Oil Cookie (Vegan)

We wanted to develop a recipe which uses no eggs or dairy but did not suffer from the absence of these ingredients. We hit the jackpot with this one. Made using almond flour, olive oil and belgian dark chocolate chips, these cookies are crispy, tiny bit chewy & absolutely moreish. Best enjoyed with a glass of cold regular or vegan milk or black coffee. Will do very well sandwiched with some ice cream for a quick summer dessert.
