One of my favourite sweets from a mithai shop is something called Anarsa. It's a rice based fried pastry sometimes filled with mawa and rolled in sesame or poppyseed. There are many versions of this across different states but my favourite is the one I get on the way to the airport in Patna when I visit my sister. I buy two pieces warm from the fryer - crispy, nutty and barely sweet, which I proceed to demolish on the flight back with a cup of black coffee.
This is memory we evoked in developing this cookie. The cookie dough uses a combination of wholegrain flour, indrayani rice flour and a bit of rawa while the filling is jaggery & nutmeg sweetened mawa (from a local dairy shop, Shreenath dairy to be precise). The flavour profile is spot on - it's nutty, just sweet enough with a deep flavour of caramelized dairy.
Have one with a cup of coffee and tell us if we have done justice to this iconic sweet which is part of nostalgia for many of us!
