This beautifully nutty, sweet & salty Caramel slice is like a festive version of a Millionaire's shortbread or caramel squares which finds it's roots in a scottish shortbread.
It starts with a base layer of buttery crumbly biscuit (made with wholegrain here), followed by thick layer of salted caramel studded with toasted coconut, cashew & almonds. Finally a layer of baked dark chocolate custard topped with candied cashew and a smattering of sea salt perfectly balances out the sweet caramel goodness.
It's biscuity & gooey with a distinctly festive touch thanks to the coconut & toasted nuts. A slice of this with a cup of coffee will work wonderfully although adding a scoop of ice cream could turn it into a worthy dessert.
