This cake is our attempt to use the Peach compote we make each year during the short season they are available in. The Peach & Almond cake begins with a nutty, honey forward sponge which, frankly, is great to snack on as is. We overlay the nuttiness of the cake with a Almond Butter Cream Cheese Frosting and a generous filling of the fruit compote which pairs oh-so-well with the almonds. We top the cake with fresh thyme and thyme candied almonds.
Overall, the flavours are surprising & delicious. To balance out the ratios of the cake, frosting and fruit compote, it's made as a single layer cake only.
As always, we have a 6 inch & a 9 inch version available but we have kept a single serve size (4 inch) for those moments when you want a cake just for yourself. Also available in an eggless version!
