This combines my love for stuffed buns as well as my mother's mutton grill but made vegetarian. I grew up eating the mutton version of this same recipe with fresh soft white bread. Here we have taken her original recipe as a launchpad and simply cooked chickpeas in yogurt, green chilies, onion, ginger & garlic and then caramelized in ghee. The chickpea mixture then gets stuffed inside a soft yet chewy bun, recreating the same flavour profile in a slightly different & portable format.
Sprinkled with sesame seeds & baked, it's a delicious snack by itself. Eat it with green chutney, imli chutney, sauce or nothing at all. Edible piece of nostalgia right there.
