We finally got our hands on some beautiful organic hapus & given that feathery light roll cakes are made for summer, this was a combination waiting to happen.
The sponge itself is ethereally light & fragrant with fresh basil leaves - the flavour is subtle yet imparts a distinctly summery vibe. We leave the mango untouched, simply pureeing the fruit and setting it into a jelly that tastes just like the fruit itself. The cake gets a generous filling of the mango jelly and some whipped cream. The outside is finished with a white chocolate & house-made yogurt frosting that's just sweet enough and compliments the rest of the flavours wonderfully.
A whole cake will easily feed about 8 people and is perfect for folks looking to get something that's light, mildly sweet and perfectly scrumptious.
