Apple & Cinnamon Cream Cake (eggless)

As some of you might gather, we love playing with classic flavors and this is as classic as it gets. First off, we wanted to make a delicious eggless cake, which doesn't taste like it's missing something. Secondly, as the weather cools we wanted to bring you something that screams winter.

What we have here is a moist Almond sponge filled with a cinnamon forward custard which brings a hint of spice to the cake. The apple chunks are caramelized just so, carrying crunch and subtle bitter notes while the fluffy & mildly sweet brown butter & cream cheese frosting rounds it off beautifully. We decided to gild the lily with a salty, buttery & nutty walnut crumble that adds extra crunch.

All in all, it's a lovely cake which feels familiar and comforting but with flavors & textures to back it up. The fact (tested by us) that it pairs oh-so-well with a hot cuppa is an absolute bonus.
