Almond & Jam Tart

This one has been in our baking repertoire since the beginning of this Bakery and before, so we thought it's time to reintroduce it.
The flaky pastry shell carries a layer of our house made fruit compote (currently strawberry) and is topped with a creamy buttery & just sweet enough Almond cream. We strew some flaked almonds on top for extra texture.
Inspired by a bakewell tart, this is equally delightful at the breakfast table with a cup of coffee or at tea time with some earl grey.
