First off, this cake has no coffee but is boldly called a 'Coffee' cake for no better reason than the fact that it's THE perfect companion for a cup of coffee.
Usually this style of cake is fairly simple & has some kind of crumb on top but we have made it into a double crumb with a layer of butter, cinnamon and toasted walnuts running right through the cake batter. The cake itself is moist & buttery and perfumed with vanilla while the salty, nutty crumb takes it to another level.
The weather is slowly changing, you can feel it in the mornings. Have a piece, just a touch warm, with a good cup of coffee for breakfast. So simple, so good.
