We have been wanting to make a decadent & tall layered VEGAN cake for a while now. First we tackled the cake. The flavours we leaned towards were caramel, banana and chocolate. So the cake here is caramelized banana cake with deep notes of jaggery - toasty, moist and without any need of eggs & butter. We also experimented with a creamy element and have made a 'custard' with jowar and house made cashew milk with a touch of hazelnut butter, again house made. The dark chocolate ganache frosting helps balance things. Sweet, salty, caramelly, nutty - it all works together.
Whether you are someone who follows a vegan lifestyle or not, we are pretty certain you will not feel the absence of eggs or dairy as long as you love the flavours we have played with here.
Bonus is we decided to keep this 'decadent' cake wholegrain and refined sugar free..
