Pies are homely, indulgent yet comforting and instantly takes me back to a mom & pop place that I first ate a proper Apple pie in (with a generous side of whipped cream). These Pies are an ode to that - albeit in a mini format for a hungry single serve or a more restrained portion for two. We can make them in a full 9-inch glory as well, for a larger gathering, if you ask nicely!
For this variant, we bake a layer of flourless chocolate cake inside a flaky pastry. This is topped with a mix of our house-made hazelnut praline & feuilletine. Finally a glorious layer of whipped chocolate mousse completes the ensemble. It's a delightful play of flavours and textures and lovely eaten cold straight from the fridge.
