We have been baking our version of Stollen, a traditional Christmas bread of German origin, for a couple of years now. A cross between a bread and a cake, this is a dense loaf laden with candied citrus (house-made), raisins & almonds. And, in keeping with tradition, a rope of Marzipan (house-made) runs through the bread. This year we have made a few changes. The Marzipan is softer and there is rich almond cream enveloping the Marzipan log, adding beautifully to the flavour & texture both. As per usual, we leave the dough to ferment overnight and develop extra flavour.
From mixing to resting, shaping, baking and again resting (the flavour improves as it 'ripens'), this is truly a labour of love. We hope it brightens up your Christmas!
P.S: This year we have made the loaf smaller (300 g or so), allowing you to order just for 1-2 people as well as getting two different flavours at one time without having too much around (as if that's a thing!).
It stays good for a while but keep it refrigerated to extend shelf life. Must be warmed slightly before eating.
