Coconut & Passionfruit Cream Pie

We have been obsessing over this flavour combination for months, trying to find a way to combine them so that both shine equally. We landed on this pie. It's a play on a traditional Coconut Cream Pie but with the added bonus of Passionfruit.
We start with a fudgy baked coconut frangipane, followed by a generous layer of Passionfruit curd. This gets topped with coconut custard followed by a light & voluptuous vanilla & coconut whipped cream. All this deliciousness sits inside a buttery and flaky pie shell. It's a light and refreshing dessert that one can enjoy at all times of the day with tea or coffee.
Also, we make these in both mini and full size formats, the former being appropriate for a fantastic solitary treat, while the latter perfect for large gatherings.
