We slowly cook cherry tomatoes in olive oil, garlic & fresh basil leaves till they get soft and smushed in the oil. The oil itself gets beautifully flavoured and can be used to add flavor to anything you are cooking. The confit tomato itself can be used to fry eggs, or a toast. You can toss pasta in it with some grated cheese or use this as a base for adding flavour to soups and stews. It's very versatile and keeps well in the fridge.
