Anyone who grew up reading Enid Blyton would understand my utter fascination with Scones. I had them nearly everyday while traveling through the UK, in small teahouses and always with a pot of tea and a healthy mound of cream. I recreated them in my own kitchen as soon as I got back. Surprisingly, we never put them on the menu, not knowing, a. if it had universal appeal b. how to get them to folks as fresh as possible. Recently, during a pop up, we made some and realized there are a fair few who share our enthusiasm. So here it is, but only for Pune folks!
These are very lightly sweetened, moist and buttery and we are pairing them with our house-made compote and minimally sweetened whipped cream. Tea of our dreams.
