As summer rolls in, we crave cool & light meals. One of my go-to breakfasts consists of homemade creamy yogurt, a sprinkle of jaggery powder or honey, fruits in season (starts with berries and ends with mango & stone fruits) and crunchy granola. This year I wanted a nuttier and toastier version of granola for this bowl of goodness.
We have been eating this for a few weeks and have shared a bag or two with friends & figured this is too good not to share. Made with rolled oats, a mix of pistachio, almonds, pumpkin & sesame seeds (and lots of it), house made tahini & applesauce, olive oil, honey & dried cranberries, it's a crunchy and wholesome snack, just by itself. But add it to the above described yogurt & fruit bowl and your morning is all set.
