We made this shortbread on the occasion of our friends, Pagdandi Bookstore & Cafe's 8th anniversary. They have been our partners for more than a year now & we are incredibly proud of this association because our friends Neha & Vishal have the same approach to books that we have to baking & food. Very personal with no shortcuts at all.
Vishal also happens to be extremely passionate about tea and coffee and once you have had their CTC tea (which they retail, incidentally) you will never go back. We took this occasion to use this tea in the shortbread along with lime zest (gondhoraj from Offerings farm to be specific). What we created is beautiful in flavor, buttery & bright with a hint of bitterness from the tea which offsets the sweetness perfectly. You can enjoy this cookie on it's own but surprisingly it complements a cup of coffee really well.
