This dreamy cake includes three layers of light Pistachio sponge sandwiching a generous layer of Pistachio custard & lime curd. The cake is finished with a not-sickly-sweet swiss meringue buttercream that has a hint of lime curd for more brightness. It's a fine balance between sweet, tangy, creamy, buttery and an absolute pleasure to tuck into with a cup of tea/coffee or as post meal dessert.
