This cake screams picnics, cosy tea times and desserts stealing the show after a lovely meal on a cool winter afternoon.
We took a page out of an Enid Blyton book and came up with a traditional butter sponge which is ultra flavourful and comforting. Sandwiched between two layers of cake is a pile of softly whipped cream and house made strawberry compote. The cake gets a 'fraiser' touch with fresh strawberries lining the border but it's as simple as it gets and downright delicious. Try stopping at one slice.
On the menu till the strawberries are in season.
