The Breakfast Cream Cake

This cake is a love letter to a good, wholesome and occasionally indulgent breakfast. We wanted to create a breakfast cake that's wholesome & bright to start off the morning on the right note but also something that pairs well with both tea and coffee.
We took off from the carrot cake format but here the batter is made with wholewheat flour, a touch of almond flour & raw sugar. We fold a bunch of fresh chopped pineapple, grated carrot, walnuts and a smidge of candied orange that lifts the flavour to another level.
Just sweet enough, a piece of this cake is sublime with coffee but it isn't too shabby with a cup of earl grey either. Try it and let us know what you think!
