We had a Coffee & Cream Cake on the menu for a long time. We loved the flavours but it needed to be eaten at room temperature to be fully appreciated which got us thinking. After a bunch of back and forth, this Cold Coffee Cake is where we have landed.
This cake is best eaten straight from the fridge and will remind you of a nice strong cold coffee. The sponge here is made with hazelnut & almond flour and is wonderfully light and nutty other than being naturally gluten free. Each layer is filled with a coffee infused whipped cream along with a coffee soak and jelly while the whole cake gets covered in a beautifully creamy, slightly tangy & salty brown sugar + mascarpone frosting.
It's a cake brimming with coffee and carries a lovely balance of sweetness, nuttiness and saltiness delivering a perfect bite if you have all the components together.
