We cook the onion on very slow heat over a few hours in olive oil with just salt till it's soft and jammy and sweet. Right in the end we balance it with some sherry vinegar and a pinch of raw sugar. Excellent as a relish, in sandwiches or on a cheese board. You can also add it to pasta and soups to add instant flavour.
