Shippable
We baked this cake for our pop up at Gorus Forest Farm. Wanting to use the produce available from the farm itself we zeroed in on ginger & lime, which grows in abundance over there. Ashwin was kind enough to send us a bunch of just harvested young ginger and limes for us to play around with.
What we came up with is a simple teacake packed with flavors of these two ingredients. The ginger pulp went in with the cake batter which was perfumed with a healthy dose of lime zest. We soaked the cake in a tangy lime syrup as soon as it came out of the oven and another layer of lime glaze went on later. Finally, we used toasted almonds to garnish the glaze, mirroring the almond flour in the cake batter, lending it a beautifully moist and hearty crumb. This went down a treat at the pop up prompting us to not keep it to ourselves.
It's a delightful little number, perfect with tea or coffee and also for the fast approaching cool weather. On the menu now.
P.S: To maintain the right ratio of ginger cake to lime glaze the cake will be thinner than what you see in the picture above.
