Oatmeal, Cranberry & Coconut Cookie (vegan)

A few months back we got a request for a vegan bake that does not contain chocolate or soy & that led us down this path. The best bit about this cookie is that when you bite into it, your first thought isn't going to be 'oh, it's a vegan cookie'. That we can guarantee. And this is coming from a team of non-vegan bakers.

We have thrown everything at it, as always, building on flavour and texture. It's got toasted oats, almonds, cranberries, coconut & jaggery, all jammed in there. So it's toasty, caramely, oaty, nutty, salty and sweet. It's got a slight chew going which is extremely pleasing. You can use this cookie to make a legitimately good ice cream sandwich (vegan ice creams are galore these days, in case you follow a non-dairy diet).

And yes, this does not contain chocolate or soy. That's where it started afterall.
