Pies are homely, indulgent yet comforting and instantly takes me back to a mom & pop place that I first ate a proper Apple pie in (with a generous side of whipped cream). These Pies are an ode to that - albeit in a mini format for a hungry single serve or a more restrained portion for two. We can make them in a full 9-inch glory as well, for a larger gathering, if you ask nicely!
For the Lime & Cream Pie we deviated from the usual meringue topping. Here the filling is a creamy and bright lime curd that sits inside a buttery shell. It's perfectly offset with a mound of whipped white chocolate cream that carries enough sweetness to cut through the tangy filling.
